Easy cooking

These recipes are in my mother's handwriting and are housed in a battered, blue plastic folder. They are transcribed here as part of the A-Z Challenge 2019. Each day in April a new letter of the alphabet and accompanying recipes are posted.

Quick and easy

Shared recipes, tried by others, tasted by many these make up a considerable number of my mother's collection. There is evidence of recipes gathered from close family members, her daughters and nieces too. This one comes from  my sister Marie. Hope you have more dried apricots in your pantries!

Easy Apricot Slice

Easy Apricot Slice
2 cups S.R. Flour
1 - cup sugar
1 cup Cocoanut [dessicated coconut]
1¼ cups Dried Apricots [chopped up] soaked for 15 mins in hot water
6 oz melted butter

Mix all together & cook ½ to ¾ of an hour mod[erate] oven
